Pizza Zucchini Boats
Ingredients
- 3 medium zucchini
- 1 lb 93% lean ground turkey
- 2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup and 1/4 cup low sugar marinara sauce
- 1/4 cup diced bell pepper
- 12 slices turkey pepperoni
- 1/2 cup low-fat shredded cheese (mozzarella)
- Fresh basil leaves (optional)
Directions
- Cut zucchini in half lengthwise. Scoop out pulp, leaving 1/4 in shells. Set pulp aside
- Spray a skillet or griddle with cooking spray and set it over medium heat
- Brown ground turkey and drain. Add oregano, salt, and pepper and stir, cooking for 1 minute. Add 1 cup marinara sauce and simmer on low heat.
- Place zucchini on baking sheet, spoon a bit of marinara sauce into bottom of each zucchini boat. Spoon ground turkey mix into the zucchini boat.
- Top each boat with shredded cheese, bell pepper, and shredded cheese.
- Preheat oven to 350F. Bake uncovered for 15-20 minutes or until brown.
- Sprinkle with chopped fresh basil (optional).

Turkey Wrap Pinwheels
Ingredients
- 2 Low carb tortilla wrap
- 2 Tbsp low fat cream cheese
- 4 slices (4oz) sliced low sodium turkey deli meat
- 1/4 cup thin sliced bell pepper
- 1/4 cup shredded carrot strips
- 1/4 cup baby spinach leaves or butter lettuce
Directions
- Slice vegetables (bell pepper), wash greens (spinach, lettuce). Spread low fat cream cheese across low-carb tortilla.
- Layer vegetables, deli meat, on low-carb wrap and roll. Slice across into Pinwheels.
