Pizza Zucchini Boats

Ingredients

  • 3 medium zucchini
  • 1 lb 93% lean ground turkey
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup and 1/4 cup low sugar marinara sauce
  • 1/4 cup diced bell pepper
  • 12 slices turkey pepperoni
  • 1/2 cup low-fat shredded cheese (mozzarella)
  • Fresh basil leaves (optional)

Directions

  1. Cut zucchini in half lengthwise. Scoop out pulp, leaving 1/4 in shells. Set pulp aside
  2. Spray a skillet or griddle with cooking spray and set it over medium heat
  3. Brown ground turkey and drain. Add oregano, salt, and pepper and stir, cooking for 1 minute. Add 1 cup marinara sauce and simmer on low heat.
  4. Place zucchini on baking sheet, spoon a bit of marinara sauce into bottom of each zucchini boat. Spoon ground turkey mix into the zucchini boat.
  5. Top each boat with shredded cheese, bell pepper, and shredded cheese.
  6. Preheat oven to 350F. Bake uncovered for 15-20 minutes or until brown.
  7. Sprinkle with chopped fresh basil (optional).

Turkey Wrap Pinwheels

Ingredients

  • 2 Low carb tortilla wrap
  • 2 Tbsp low fat cream cheese
  • 4 slices (4oz) sliced low sodium turkey deli meat
  • 1/4 cup thin sliced bell pepper
  • 1/4 cup shredded carrot strips
  • 1/4 cup baby spinach leaves or butter lettuce

Directions

  • Slice vegetables (bell pepper), wash greens (spinach, lettuce). Spread low fat cream cheese across low-carb tortilla.
  • Layer vegetables, deli meat, on low-carb wrap and roll. Slice across into Pinwheels.
